White growth inside a sprouting coconut.
Before a coconut starts sprouting, a little white ball-shaped embryo starts developing right underneath the hole the sprout will come from. At first it is hard, as it grows bigger it becomes spongy. When the sprout comes out of the husk bunut the lambo is about 8 cm in diameter. It keeps growing until all the water and meat is used up and the whole shell is filled with it. The roots of the developing tree grow on top of the hard shell underneath the fibers and eventually come out through the fibre. Some people say that children should not eat the small lambo because it would cause them to drown when they go swimming.
I like to eat the white growth inside a coconut when it is not yet very big.
